Prepare the Veal

Place the veal rib eye steaks on a clean surface. Season both sides with salt and black pepper.

Assemble the Saltimbocca

Lay two slices of prosciutto on each veal steak, followed by two sage leaves. Press down gently to adhere.

Sear the Steaks

In a large skillet, heat the olive oil over medium-high heat. Once hot, place the veal steaks prosciutto-side down in the skillet. Sear for about 3-4 minutes until golden brown.

Flip and Cook

Carefully flip the steaks and cook for another 3 minutes until the veal is cooked through. Remove the steaks from the skillet and set aside.

Make the Sauce

In the same skillet, add the capers and tomato conserva. Stir to combine and cook for about 2-3 minutes, scraping any browned bits from the bottom of the skillet.

Serve

Place the veal saltimbocca on a serving plate, spoon the caper and tomato sauce over the top, and serve immediately.
