Pizza Preparation
Prepare the Oven
Preheat your oven to 220°C (428°F). If using a pizza stone, place it in the oven to heat up as well.
Roast the Mushrooms
Clean the mushrooms and slice them into thick pieces. In a bowl, combine the mushrooms, olive oil, crushed garlic cloves, salt, and black pepper. Toss until the mushrooms are well coated. Spread them out on a baking sheet. Roast in the preheated oven for about 15-20 minutes, or until they're golden brown and tender.
Prepare the Dough
While the mushrooms are roasting, take the pizza dough out and let it rest at room temperature for about 10 minutes. Roll out the dough on a floured surface to your desired thickness.
Assemble the Pizza
Once the mushrooms are roasted, remove them from the oven. On the rolled-out pizza dough, spread the roasted mushrooms evenly. Tear or slice the Tallegio cheese and distribute it over the mushrooms. Sprinkle the fresh herbs and lemon zest on top.
Bake the Pizza
Carefully transfer the assembled pizza to the hot pizza stone or a baking sheet. Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbling.
Serve
Once baked, remove the pizza from the oven. Let it cool for a minute before slicing. Serve hot and enjoy your delicious mushroom pizza!
