Preparing Sauces

Make mignonette

In a small bowl combine 1/2 cup red wine vinegar, 2 tablespoons finely minced shallot, 1 teaspoon coarsely ground black pepper and 1/2 teaspoon sugar (if using). Stir, then let rest at room temperature for at least 15 minutes to soften the shallot and marry flavors. Stir in 1 teaspoon finely chopped parsley just before serving if desired.

Prepare other condiments

Place 1 cup cocktail sauce and up to 2 tablespoons hot sauce (if using) in serving bowls. Cut 2 lemons into wedges and transfer to a small plate.

Shucking & Serving Oysters

Clean shells

Rinse oysters under cold running water and scrub with a stiff brush to remove dirt and debris. Discard any shells that are cracked or open and do not close when tapped.

Stabilize oyster

Place a thick towel on a work surface and fold it to create a firm cradle. Position an oyster cup-side down (deep side up) in the towel with the hinge pointing toward you. Alternatively, wear a protective glove on the hand holding the oyster.

Insert oyster knife

Holding the oyster firmly, insert the tip of an oyster knife into the hinge (point where shells meet) and twist gently to pop the hinge. Work the knife along the top shell seam to cut the adductor muscle, then lift off the top shell. Keep the oyster level so you retain the liquor (natural juice) in the bottom shell.

Detach and inspect

Run the knife under the oyster to fully detach the bottom adductor muscle so the oyster sits freely in the bottom shell. Inspect the oyster: it should smell clean and briny (like the sea). If it smells off, discard it.

Serve on bed

Spread 4 cups of crushed ice (or rock salt) on a large platter to create a stable bed. Arrange the shucked oysters on the ice, each in its bottom shell. Spoon a small amount of mignonette or cocktail sauce on the side of each oyster or allow guests to add themselves. Add lemon wedges to the platter.

Eating

To eat, squeeze lemon over an oyster if desired, add a small spoonful of mignonette or cocktail sauce, tilt the shell and slurp the oyster and its liquor. Chew once or twice to appreciate the texture and flavor, then swallow. Offer hot sauce as an option.

Keep oysters cold until just before shucking. Serve immediately after shucking. Do not leave raw oysters at room temperature for more than 2 hours (1 hour if ambient temperature is above 90°F / 32°C). Leftover shucked oysters can be refrigerated in their liquor in a covered container for up to 24 hours for cooking purposes only; discard if uncertain. Wash hands and tools thoroughly after handling raw shellfish.
