Preheat Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Incorporate Butter
Cut the cold butter into small cubes and add to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
Add Wet Ingredients
Pour in the heavy cream and vanilla extract. Stir just until the dough comes together; do not overmix.
Shape Shortcakes
Turn the dough out onto a floured surface. Pat it into a 1-inch thick rectangle and cut out rounds using a biscuit cutter.
Bake
Place the rounds onto the prepared baking sheet and bake for 15-18 minutes or until golden brown.
Cool Shortcakes
Remove from the oven and allow to cool slightly before serving.
Lemon Curd Mousse
Bloom Gelatin
In a small bowl, sprinkle gelatin over water and let it sit for about 5 minutes to bloom.
Mix Lemon Curd
In a medium bowl, whisk together the lemon curd and powdered sugar until smooth.
Incorporate Gelatin
Heat the bloomed gelatin in the microwave for 10-15 seconds until dissolved. Stir into the lemon curd mixture.
Fold in Whipped Cream
In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the lemon curd mixture until fully combined.
Chill Mousse
Chill the mousse in the refrigerator for at least 30 minutes before serving.

In a medium bowl, combine the fresh blueberries, sugar, and lemon juice.
Macerate Blueberries
Gently toss the ingredients together and let sit for at least 15 minutes to allow the blueberries to release their juices.
Assembly
Prepare Shortcakes
Slice the cooled shortcakes in half horizontally.
Add Lemon Curd Mousse
Spoon a generous amount of lemon curd mousse onto the bottom half of each shortcake.
Add Blueberries
Top with a spoonful of macerated blueberries and their juices.
Garnish
Chiffonade the fresh basil and sprinkle over the top before placing the top half of the shortcake back on.
