Prepare the Cranberries
Rinse the fresh cranberries under cold running water. Discard any that are mushy or discolored.
Combine Ingredients
In a medium saucepan, combine the rinsed cranberries, port wine, granulated sugar, fresh orange juice, orange zest, ground cinnamon, ground nutmeg, ground allspice, and a pinch of salt.
Simmer and Reduce
Allow the mixture to simmer for about 10-15 minutes, or until the cranberries burst and the relish thickens slightly. Stir occasionally.
Cool Down
Remove the saucepan from heat and let the relish cool to room temperature. It will thicken further as it cools.
Store and Serve
Transfer the cooled relish to a clean jar or airtight container. Refrigerate for at least 2 hours before serving to enhance flavors. Serve chilled or at room temperature.
