Method
Preparation of Peas

Soak the Peas
In a bowl, soak the rinsed peas in 3 cups of water for at least 4 hours or overnight for best results.
Cooking the Dish
Cook the Peas
In a large pot, drain the soaked peas and add fresh water. Bring to a boil, then reduce heat and simmer for about 30 minutes or until the peas are tender.
Sauté Vegetables

Add Rice and Seasonings
To the pot with the cooked peas, add the sautéed vegetables, long-grain rice, salt, bay leaf, black pepper, and thyme. If using, add the smoked ham hock for flavor.
Simmer
Stir the mixture and add an additional 2 cups of water. Bring to a boil again, then reduce heat to low, cover, and simmer for 20-25 minutes or until the rice is cooked and has absorbed the liquid.
Serving
Fluff and Serve
Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork, discard the bay leaf, and serve hot. Garnish with sliced green onions.
