Marinade Preparation
Prepare the Marinade
In a small bowl, whisk together olive oil, lime juice, garlic powder, cumin, chili powder, salt, and black pepper until well combined.
Marinate the Steak
Place the flank steak in a large resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, or up to overnight for more flavor.
Cooking the Fajitas
Cook the Steak
Heat a large skillet or grill pan over medium-high heat. Remove the steak from the marinade, letting excess drip off. Cook the steak for about 4-5 minutes on each side for medium-rare, or longer depending on your desired doneness. Remove the steak from the pan and let it rest for about 5 minutes before slicing.
Slice the Steak
After resting, slice the steak against the grain into thin strips.
Assemble the Fajitas
Warm the tortillas in a dry skillet or microwave. To assemble, place some sliced steak and sautéed vegetables on each tortilla. Top with fresh cilantro, sour cream, and salsa as desired.
