Curried Leek Cream

Method

Prepare the Salmon

Season the Salmon

Pat the salmon fillets dry and season both sides with salt and black pepper.

Sear the Salmon

In a large skillet, heat olive oil over medium-high heat. Add the salmon skin-side down and sear for about 4-5 minutes until the skin is crispy. Flip and cook for another 3-4 minutes until cooked through. Remove from the skillet and keep warm.

Make the Curried Leek Cream

Sauté the Leeks

In the same skillet, add butter and leeks. Sauté until softened, about 5 minutes.

Add Cream and Curry

Pour in the heavy cream and add curry powder and salt. Simmer for 5-7 minutes until slightly thickened. Blend until smooth and keep warm.

Prepare the Charred Peas

Char the Peas

In a separate pan, heat olive oil over medium-high heat. Add fresh peas and sauté until slightly charred, about 3-4 minutes. Season with salt.

Make the Salad

Mix the Salad

In a bowl, combine sliced radishes and julienned carrots. Drizzle with olive oil and lemon juice, and season with salt to taste. Toss to combine.

Plate the Dish

Serve

On a plate, spoon some curried leek cream, place the seared salmon on top, add charred peas on the side, and serve the radish and carrot salad.
