Crack 24 eggs into a very large mixing bowl. Add 2 cups whole milk, 2 teaspoons salt, and 1 teaspoon black pepper. Whisk vigorously until mixture is uniform and slightly frothy (about 1–2 minutes).

Prep and Mix

Cook

Choose protein mix to yield 48 sandwich portions. For bacon: bake on sheet pans at 400°F (205°C) for 15–20 minutes until crisp, then drain on paper towels. For sausage patties: form or use preformed patties approximately 2.75–3 inches in diameter, cook on a griddle over medium heat 4–5 minutes per side until internal temp 160°F (71°C). Split each biscuit in half horizontally. If desired, lightly butter each cut side. If using sausage or chorizo, brown in a skillet over medium-high heat until cooked through and no pink remains, breaking into small crumbles; drain excess fat. If using bacon, bake on sheet pans at 400°F (200°C) for 15–20 minutes until crisp, then chop. Keep warm in a hotel pan; if there is excess grease, blot with paper towels so burritos aren’t greasy.

Cook protein

Taste a small piece and season with a pinch of salt and pepper if needed. For chorizo you may not need extra salt.

Season

Heat remaining butter (about 2 tbsp) or 1–2 tbsp oil in a large skillet over medium heat. Add diced onion and cook until translucent, about 4–5 minutes. Add diced bell peppers and cook 4–6 more minutes until softened. Add jalapeño if using and cook 1 minute more. Season with 1/2 tsp salt and 1/4 tsp pepper.

Sauté aromatics

If using frozen hash browns, cook according to package until golden and cooked through (you can bake on sheet pans or cook in a skillet). If using pre-cooked diced potatoes, reheat in a skillet until lightly crisp. Combine potatoes with the sautéed vegetables and keep warm in a hotel pan.

Stir chopped cilantro into the vegetable/potato mix just before assembly to retain freshness, reserving a small amount for garnish.

Shred cheeses and mix together in a bowl. Portion into a shallow pan so line cooks can sprinkle cheese into each burrito during assembly. Keep covered and at room temperature for quick melting; if long hold, keep in a warm oven (140–150°F/60–65°C) but avoid melting into a single mass.

Place salsa/pico, sour cream, and salsa verde in serving bowls or hotel pans. For catering service, keep salsa chilled and cover. Provide small serving spoons or ladles. If making ahead, stir and taste to adjust seasoning (lime, salt) before service.

Warm tortillas just before service so they’re pliable: stack tortillas in small batches, wrap in a clean kitchen towel or foil, and heat in a 300–350°F oven for 8–12 minutes, or use steam wells/tortilla warmers. Keep wrapped to stay warm and moist.

Set an assembly line: tortilla, spoon 1/2 cup scrambled eggs, 2–3 tbsp cooked meat, 1/3 cup vegetable/potato mix, 1/4 to 1/3 cup shredded cheese, 1–2 tbsp salsa/pico (or leave on side), and 1 tbsp sour cream if desired. Fold sides in, then roll tightly from the bottom up to make a burrito. Each burrito will be roughly 1 to 1 1/4 cups of filling.

Assemble burritos

Place each burrito on a sheet of aluminum foil and wrap halfway or fully (depending on service). For a tray presentation, cut burritos in half on a bias and arrange cut-side up in hotel pans lined with parchment or chafing tray liners. Alternatively, leave whole and arrange in rows. Sprinkle reserved cilantro and additional shredded cheese on top if desired.

Wrap for service

Keep assembled foil-wrapped burritos in a warm box or chafing tray on low until service. If holding uncovered halves on a chafing tray, maintain at 140°F (60°C) and replenish heat source as needed. Label any burritos with a different protein (bacon, chorizo, vegetarian) for guests.

Place bowls of salsa, sour cream, guacamole, lime wedges, and hot sauce on or beside the tray. Garnish tray with cilantro and optionally a light sprinkle of shredded cheese. Provide tongs for picking up foil-wrapped burritos and small plates and napkins for guests.

Plan assembly so eggs and potatoes are hot when rolled — assemble within 20–30 minutes of cooking for best texture. For large events, stagger cooking and use holding equipment (steam table, warmers).

Place a large, heavy-bottomed sauté pan or griddle over medium-low to medium heat. Add 1 tablespoon neutral oil if you want slightly higher initial heat, then add 3 tablespoons butter. Heat until the butter is melted and foaming but not browned (approx. 1–2 minutes). The pan should be warm but not smoking.

Preheat and prepare pan

Pour the whisked egg mixture into the pan. Let it sit undisturbed for 10–15 seconds so the outer edge just begins to set. Using a silicone spatula, gently push the set edges toward the center while tilting the pan to allow uncooked egg to flow to the edges. Continue this gentle folding and pushing every 10–20 seconds. Keep heat at medium-low; the goal is slow, gentle cooking to create tender curds. Total cook time should be 3–6 minutes depending on pan size and heat.

When the eggs are mostly set but still slightly glossy and a little underdone (residual heat will finish them), remove the pan from the heat. Stir a final time to combine any larger curds and distribute moisture evenly; if desired, stir in an additional 1/2 tablespoon butter for extra silkiness. Taste and adjust seasoning with extra salt and pepper to taste.

Remove from heat and finish

Transfer scrambled eggs to a warmed, shallow hotel pan to hold for service. Keep the holding temperature between 140–160°F (60–71°C). Stir gently every 5–10 minutes to prevent overcooking and drying. If eggs begin to dry, add small pats of butter or a splash of warm milk and fold gently to restore creaminess.

Hold for catering service

Just before serving, sprinkle chopped fresh chives over the eggs (about 2 tablespoons) and give a light final stir. Serve immediately.

If using natural hog casings, place in a bowl of warm water for 30 minutes to soften. Rinse inside and out by running water through each casing, then leave in fresh water until ready. If using collagen casings, follow package rehydration instructions or keep ready for stuffing.

Prepare casings

In a large bowl or the bowl of a stand mixer fitted with the paddle attachment, combine the ground turkey, 1 cup maple syrup, kosher salt, black pepper, ground sage, thyme, onion powder, garlic powder, smoked paprika and crushed red pepper flakes. With the mixer on low (or using a sturdy wooden spoon), slowly add the cold water in a steady stream to help the mixture emulsify. Mix until the meat becomes sticky and tacky (about 2–3 minutes with a mixer).

Make sausage mixture

To keep the mixture safe and firm, work with the bowl over a larger bowl of ice or add the 2 cups of ice to the mixer intermittently and drain any excess water. Chill the blended mixture in the refrigerator for 20–30 minutes until cold but not frozen.

Keep cold

Fit a sausage stuffer or a meat grinder with a stuffing tube. Slide the prepared casings onto the tube and tie a knot at the end of each casing. Feed the chilled turkey mixture into the stuffer, filling casings evenly. Avoid over-stuffing—fill until firm but with a little give. Twist sausages into approximately 6–7 inch links (or desired catering portion). Prick any large air pockets with a sterile needle and reform.

Stuff sausages

Bring a large pot of water to a gentle simmer (not a boil) and add a splash of vinegar (optional, 1 tbs) to help set the casings. Submerge the sausages in batches and poach at 75–80°C (170–175°F) for 12–15 minutes until internal temperature reaches 150°F (66°C). Do not boil, or casings may burst.

Poach to set

Transfer poached sausages to an ice bath for 5 minutes to stop cooking. Drain and refrigerate on trays if preparing ahead. Sausages may be held refrigerated up to 48 hours before finishing; bring to room temperature before searing if chilled.

Cool and refrigerate (optional for catering prep)

For hot service, heat a large skillet or griddle over medium-high heat and add 2 tbs neutral oil. Place sausages in the pan and sear, turning every 1–2 minutes, until well browned and caramelized on all sides (about 6–8 minutes). Confirm internal temperature is 165°F (74°C) before serving.

Sear before serving

In a small saucepan over medium heat combine 1 cup maple syrup, Dijon mustard, apple cider vinegar and butter. Bring to a gentle simmer and cook for 3–4 minutes, stirring, until slightly reduced and glossy. Remove from heat and whisk in freshly ground black pepper.

Make glaze

Brush the warm glaze over seared sausages or toss sausages in a shallow hotel pan with the glaze to coat evenly. Return to the hot griddle for 30–60 seconds per side to set the glaze if desired.

Place glazed sausages in chafing dishes or hotel pans lined with parchment. For best texture, keep on low heat (140–150°F / 60–65°C) and pour any remaining glaze over the top periodically to keep moist. Garnish with chopped parsley if desired when serving.
