Base & Yogurt
Prepare sweetened yogurt (optional)
In a large bowl, combine 8 cups plain Greek yogurt with 1 cup honey and 2 teaspoons vanilla extract. Stir until evenly sweetened. Taste and adjust sweetness. Keep 4 cups plain or use 4 cups vanilla yogurt separately for variety.
Transfer sweetened and plain/vanilla yogurts to separate serving bowls labeled for the buffet so guests can choose.
Granola & Crunch
If you prefer warm granola, preheat oven to 300°F (150°C), spread granola on a sheet pan and warm for 8–10 minutes, stirring once. Cool slightly before placing in serving bowl.
Fruit
Wash all fresh fruit. Hull and slice strawberries; leave blueberries and raspberries whole; dice mango into bite-sized pieces. Slice bananas just before service to avoid browning and store cut bananas with a light squeeze of lemon juice if pre-cutting is necessary.
Arrange fruit in shallow serving trays or bowls so guests can easily spoon portions into parfait cups. Sprinkle 2 tablespoons lemon zest over mixed berries to brighten flavor (optional).
Sauces & Mix-ins
Transfer fruit compote/jam, maple syrup, peanut/almond butter, and chocolate sauce into individual small bowls. Provide small spoons or ladles for portion control. Warm peanut butter slightly (10–15 seconds in microwave) if it is very stiff so guests can drizzle or dollop easily.
Toppings & Garnishes
Place dried coconut flakes, chia seeds, and fresh mint leaves in small bowls for topping. Keep mint covered with a damp paper towel and refrigerated until service to keep leaves fresh.
Assembly (for guests or staff to build parfaits)
Provide an example parfait and a simple instruction card: 1) Spoon 2–3 tablespoons yogurt into the bottom of a cup. 2) Add 1–2 tablespoons fruit or compote. 3) Sprinkle 1–2 tablespoons granola or nuts for crunch. 4) Add another 2–3 tablespoons yogurt to create layers. 5) Top with fresh fruit, a drizzle of sauce (maple, chocolate or nut butter), and finish with seeds, coconut flakes, and a mint leaf. For a single serving (6–8 oz cup) target quantities: 1/3 cup yogurt, 2–3 tablespoons fruit, 2 tablespoons granola, 1 tablespoon sauce, and 1 teaspoon seeds/toppings.
If pre-building for a catering line, layer parfaits in clear cups: Layer 1: 1/3 cup yogurt. Layer 2: 2–3 tbsp fruit or compote. Layer 3: 2 tbsp granola or nuts. Repeat with 1/4–1/3 cup yogurt to finish. Top with fresh fruit and garnish. Chill completed parfaits for up to 2 hours before service; add crunchy toppings like granola or chocolate chips just before serving to keep them crisp.
Serving & Storage
Set up buffet with labeled bowls of yogurts, granola, fruits, sauces and toppings. Place serving utensils in each bowl and provide napkins and spoons.
Leftover assembled parfaits: store covered in refrigerator and consume within 24 hours (best within same day to preserve texture). Unassembled components: refrigerate yogurt and fresh fruit up to 3 days; granola and nuts stored in airtight containers at room temperature for up to 7 days; sauces kept refrigerated per label or up to 5 days if homemade.
