Asada Preparation

Marinate the Steak

In a large bowl, combine minced garlic, lime juice, olive oil, ground cumin, salt, black pepper, and chili powder. Mix well to create a marinade.

Add Steak to Marinade

Place the flank steak into the bowl, ensuring it is fully coated in the marinade. Cover and refrigerate for at least 2 hours, or overnight for best results.

Grill the Steak

Preheat the grill to medium-high heat. Remove the steak from the marinade and grill for about 6-8 minutes on each side, or until it reaches the desired level of doneness.

Rest and Slice

Once cooked, remove the steak from the grill and let it rest for 5-10 minutes. Slice against the grain into thin strips.

In a large saucepan, bring 4 cups of water to a boil over medium heat. Add 1 teaspoon of salt to the boiling water.

Gradually whisk in the cornmeal to the boiling water to prevent lumps. Continue stirring until the mixture thickens.

Reduce heat to low and cook for 20-30 minutes, stirring frequently to avoid sticking. The mixture should be thick and smooth.

Stir in the butter until melted. If using, add shredded cheese and mix until well incorporated.
