Preparing the Dough

Make the Dough

In a large bowl, mix the flour and salt. Make a well in the center, add the eggs, and mix until a dough forms. Knead the dough for about 5 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Prepare the Filling

In a medium bowl, combine corn kernels, ricotta cheese, Parmesan cheese, chives, salt, and black pepper. Mix well until all ingredients are incorporated.

Roll Out the Dough

After resting, divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or a rolling pin.

Fill and Shape

Cut the dough into squares (about 3 inches). Place a teaspoon of filling in the center of each square. Fold diagonally to form a triangle and press the edges to seal.

Cooking

Boil the Triangoli

Bring a large pot of salted water to a boil. Carefully add the triangoli and cook for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon.

Making the Butter Sauce

Prepare the Sauce

In a saucepan, melt the butter over low heat. Add chopped chives and salt. Stir to combine and cook for 2 minutes.

Plate the triangoli and drizzle the butter sauce over them. Garnish with extra chives if desired.
