Chicken Preparation

Marinate the Chicken

In a bowl, combine olive oil, minced garlic, red pepper flakes, chopped rosemary, salt, and black pepper. Rub the mixture all over the chicken, including under the skin. Marinate for at least 1 hour, preferably overnight in the refrigerator.

Prepare the Grill

Preheat your grill to medium-high heat. Remove the chicken from the marinade and let any excess marinade drip off.

Grill the Chicken

Place the chicken on the grill, breast side down. Grill for about 15-20 minutes until nicely charred, then flip and continue grilling for another 20-25 minutes or until the internal temperature reaches 165°F (75°C). Allow the chicken to rest for 10 minutes before carving.

Farro and Escarole Preparation

Cook the Farro

In a pot, bring vegetable broth to a boil. Add the green farro, reduce the heat to low, and simmer covered for about 30 minutes or until tender. Drain any excess liquid.

Sauté the Escarole

In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped escarole and sauté until wilted, about 5 minutes. Season with salt and pepper.

Combine and Serve

Mix the cooked farro with the sautéed escarole. Stir in lemon juice and grated parmesan cheese. Adjust seasoning as needed. Serve alongside the grilled chicken.
