Prepare the Vegetables

Preheat the oven to 350°F (175°C). Peel and slice the rainbow carrots into thin rounds. In a skillet, heat the olive oil over medium heat and sauté the carrots for about 5-7 minutes until they begin to soften.

Combine Ingredients

In a large mixing bowl, whisk together the eggs, heavy cream, Parmesan cheese, salt, and black pepper until well combined. Stir in the sautéed carrots, English peas, and thyme.

Bake the Sformato

Grease a baking dish with olive oil. Pour the mixture into the dish and smooth the top. Bake in the preheated oven for 30-35 minutes, or until the top is golden and the center is set.

Once baked, remove from the oven and let it cool for a few minutes. Slice and serve warm or at room temperature.
