Making Tortilla Chips
Prepare the Tortillas
Cut the corn tortillas into wedges. You can cut them into quarters or sixths, depending on your preferred chip size.
Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of tortilla; it should sizzle immediately.
Fry the Chips
Carefully add a handful of tortilla wedges to the hot oil. Fry for about 2-3 minutes or until they are golden brown and crispy. Do not overcrowd the pan.
Drain and Season
Use a slotted spoon to remove the chips from the oil and transfer them to a paper towel-lined plate to drain excess oil. While the chips are still hot, sprinkle with salt to taste.
Serve
Serve the tortilla chips immediately with guacamole and salsa on the side.
