Method
Preparing the Donut Dough
Mix Dry Ingredients
In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon until well combined.
Combine Mixtures
Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
Chill the Dough
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the dough to firm up.
Frying the Donuts
Heat Oil
In a deep frying pan, heat oil to 350°F (175°C). Ensure there is enough oil for the donuts to float.
Shape the Donuts
Scoop the chilled dough with a donut cutter or use your hands to shape them into round donuts.
Fry the Donuts
Carefully place the donuts in the hot oil, frying them for about 2-3 minutes on each side until golden brown.
Drain Excess Oil
Use a slotted spoon to remove the donuts from the oil and place them on paper towels to drain excess oil.
Preparing the Cinnamon Sugar Coating
Mix Cinnamon Sugar
In a shallow bowl, combine the granulated sugar and ground cinnamon.
Making the Diplomat Cream
Whip Heavy Cream
In a mixing bowl, whip the heavy cream until soft peaks form.
Fold in Pudding Mix
Gently fold in the vanilla bean paste and pudding mix until fully incorporated.
Assembling the Donuts
Fill the Donuts
Using a piping bag, fill each donut with apple butter, then pipe the diplomat cream into the center.
