Prepare graham-sugar rim

On a small flat dish, combine graham cracker crumbs and granulated sugar; mix well. Run the lime wedge around the outer rim of a chilled coupe or rocks glass to moisten. Dip the moistened rim into the graham-sugar mixture and spin to coat evenly. Set the glass aside to let the rim set.

Fill a cocktail shaker about two-thirds full with ice cubes.

Add Don Q Coconut Rum (1.5 oz), Blue Chair Bay Key Lime Rum Cream (1.0 oz), pineapple juice (1.5 oz), and fresh lime juice (0.5 oz) to the shaker. If you prefer a sweeter drink, add simple syrup (0.25 oz).

Secure the shaker lid and shake vigorously for 10–12 seconds, until the shaker is well-chilled and slightly frosted.

Double-strain (optional) the mixture into the prepared, chilled glass to avoid ice shards and any large pulp pieces. Leave room at the top for garnish.

Garnish with a lime wheel perched on the rim and, if desired, sprinkle a pinch of extra crushed graham cracker onto the froth or top of the drink for a pie-like appearance.
