Duck Frites
Prepare the Duck
Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Season with salt and pepper.
Cook the Duck
In a skillet over medium heat, place the duck breasts skin-side down. Cook for about 6-8 minutes until the skin is crispy, then flip and cook for an additional 4-6 minutes until the meat is medium-rare. Remove from heat and let rest.
Prepare the Potatoes
Peel and cut the potatoes into thin strips. Rinse them in cold water and pat dry.
Brussels Sprouts
Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow leaves. Halve them if they are large.
Sauté the Brussels Sprouts
In a large skillet, heat olive oil over medium-high heat. Add minced garlic and sauté for 1 minute. Add the Brussels sprouts, season with salt and pepper, and sauté for about 8-10 minutes until they are browned and tender.
Add Balsamic Vinegar
Drizzle balsamic vinegar over the Brussels sprouts and cook for an additional 2 minutes, stirring to combine. Remove from heat.

Prepare the French Fries
If using frozen fries, cook according to package instructions. If making homemade fries, cut potatoes into strips and fry them until golden brown.
Assemble the Poutine
Place the hot French fries on a plate. Scatter cheese curds over the fries.
Add Gravy
Heat the gravy in a saucepan until hot, then pour it generously over the fries and cheese curds. Season with salt and pepper to taste.
