Preparation of Salmon
Prepare the Cream Cheese Filling
In a medium bowl, mix the cream cheese, fresh dill, garlic powder, salt, and black pepper until well combined. Set aside.
Stuff the Salmon
Using a sharp knife, make a slit in the side of each salmon fillet to create a pocket. Spoon the cream cheese mixture into each pocket generously.
Cooking Salmon
Preheat the Oven
Preheat your oven to 375°F (190°C).
Prepare the Baking Dish
Lightly grease a baking dish with cooking spray or a little olive oil.
Bake the Salmon
Place the stuffed salmon fillets in the prepared baking dish and bake in the preheated oven for 20-25 minutes or until the salmon is cooked through and flakes easily with a fork.
Apricot Glaze
Prepare the Glaze
In a small saucepan over medium heat, combine the apricot preserves, Dijon mustard, soy sauce, and lemon juice. Stir until well blended and heated through, about 5 minutes.
Serving
Plate the Dish
On a serving platter, arrange the sautéed baby spinach. Place the cooked salmon fillets on top, and drizzle with the warm apricot glaze before serving.
