Infuse Mezcal (Optional)

If you want to create house-infused smoked pineapple mezcal, smoke fresh pineapple pieces over wood chips and let them steep in mezcal for at least 4 hours or overnight. Strain before using.

Mix Ingredients

In a cocktail shaker, combine the smoked pineapple mezcal, yellow chartreuse, fresh pineapple juice, fresh lime juice, orgeat syrup, and cherry bitters.

Shake

Add ice to the shaker and shake well for about 15-20 seconds until chilled.

Strain

Strain the mixture into a chilled cocktail glass or coupe.

Garnish

Garnish with a wedge of pineapple and a maraschino cherry. Grate a pinch of nutmeg over the top for added aroma.
