Preparation
Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in 30-second intervals until smooth. Stir well and set aside to cool slightly.
Mix Eggs and Sugar
In a separate mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is light and frothy.
Combine Mixtures
Pour the melted chocolate mixture into the egg mixture, whisking constantly until fully combined.
Add Dry Ingredients
Sift in the all-purpose flour, add the vanilla extract, and a pinch of salt. Gently fold the dry ingredients into the wet mixture until just combined.
Baking
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
Bake the Cakes
Place the filled ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes until the edges are firm but the center is soft.
Cool and Serve
Remove the cakes from the oven and let them cool for 1 minute. Carefully run a knife around the edge of each ramekin to loosen the cakes, then invert them onto plates.
