Infusing the Alcohol

In a large glass jar, combine the neutral grain alcohol with the dried herbs, citrus peels, vanilla bean (split open), cinnamon stick, and cloves. Seal the jar tightly and let it sit in a cool, dark place for at least 2 weeks, shaking the jar gently every few days to mix the ingredients.

Preparing the Sugar Syrup

After the infusion period, combine the sugar and water in a saucepan over medium heat. Stir until the sugar is fully dissolved, then remove from heat and allow to cool.

Straining the Infusion

Once the infusion has steeped for 2 weeks, strain the mixture through a fine mesh strainer or cheesecloth into a large mixing bowl. Discard the solids, keeping only the infused liquid.

Combining the Infusion with Sugar Syrup

Slowly add the cooled sugar syrup to the infused liquid, stirring well to combine. Taste and adjust the sweetness by adding more sugar syrup if desired.

Bottling the Amaro

Using a funnel, pour the combined mixture into clean, sterilized bottles. Seal tightly and label with the date.
