Method

Preparation of Base

1

Mix Base Ingredients

In a large glass jar, combine the neutral grain spirit and water. Stir well to ensure they are thoroughly mixed.

Infusion of Botanicals

2

Add Herbs and Botanicals

Carefully add the gentian root, wormwood, sweet orange peel, cinnamon stick, cloves, cardamom pods, star anise, dried lavender, and peppermint leaves to the jar with the base mixture.

3

Infuse Mixture

Seal the jar tightly and let the mixture steep in a cool, dark place for 2 weeks. Shake the jar gently every few days to help the flavors combine.

Sweetening the Amaro

4

Strain the Mixture

After 2 weeks, strain the mixture through a fine mesh sieve or cheesecloth into a clean jar, discarding the solids.

5

Dissolve Sweeteners

In a small saucepan over low heat, combine the sugar and honey with 100ml of water. Stir until the sugar and honey are completely dissolved.

6

Combine Sweetener with Infused Base

Add the dissolved sweetener to the strained infusion and stir well. Adjust sweetness to taste, adding more sugar or honey if desired.

Bottling and Storing

7

Bottle the Amaro

Transfer the final mixture into dark glass bottles for storage. Seal tightly and label with the date.

8

Store Properly

Store the bottles in a cool, dark place. The amaro will develop its flavors over time and can be enjoyed after a few days.
