Preparation Instructions
Prepare the Poblano
Roast the poblano pepper over an open flame or under a broiler until the skin is charred. Place it in a bowl and cover with plastic wrap for about 10 minutes. Once cooled, peel the skin off, remove the seeds, and chop.
Combine Ingredients
In a mixing bowl, combine the Monterey Jack cheese, Chihuahua cheese, cream cheese, roasted poblano, sautéed garlic, chopped cilantro, salt, and black pepper. Mix until well-combined.
Melt the Cheese
Transfer the cheese mixture to an oven-safe skillet or dish. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until the cheese is melted and bubbly.
Serve
Remove the queso fundido from the oven and serve hot with tortilla chips for dipping.
