Preparation
Prepare the Filling
In a mixing bowl, combine the cooked shredded chicken, refried beans, and shredded cheese. Mix well until fully combined.
Roll the Taquitos
Warm the corn tortillas in a skillet over low heat until pliable. Spoon about 2 tablespoons of the filling onto the lower third of each tortilla. Roll tightly into a cylinder shape and secure with a toothpick if necessary.
Fry the Taquitos
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully place the rolled taquitos seam-side down into the oil. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
Prepare Aji Amarillo Crema
In a small bowl, combine aji amarillo sauce (or paste) with sour cream or Greek yogurt. Stir well to create a drizzle sauce.
Serve
Drizzle the aji amarillo crema over the fried taquitos and garnish with chopped fresh cilantro. Serve immediately.
