Marinate the Chicken

In a bowl, combine the olive oil, minced garlic, lemon juice, cumin powder, paprika, salt, and black pepper. Add the chicken breast and coat it well. Cover and let it marinate in the refrigerator for at least 30 minutes.

Prepare the Rice

In a saucepan, combine the rice and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is cooked and the broth is absorbed.

Cook the Chicken

Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.

Cook the Vegetables

In a separate pan, sauté the mixed vegetables over medium heat until they are tender, about 5-7 minutes.

Plate the Dish

On a plate, serve a scoop of rice topped with the sautéed vegetables. Slice the grilled chicken breast and place it on top. Garnish with freshly chopped cilantro.
