Prepare watermelon

Cut the watermelon into bite-size 1-inch cubes. Remove any remaining rind and seeds. Measure about 6 cups of cubes and transfer to a large bowl.

Prepare cucumber

Peel the cucumber if desired, halve lengthwise and scoop out large seeds with a spoon if present. Slice into 1/4-inch half-moons and add to the bowl with watermelon.

Add greens and herbs

If using arugula, add 2 cups to the watermelon and cucumber. Add 1 tablespoon chopped fresh mint to the bowl. Gently toss to combine so ingredients are evenly distributed.

Add feta

Crumble 3 ounces of feta cheese over the salad and gently fold it in, keeping some larger crumbles visible for texture.

Make dressing

In a small bowl or jar combine 2 tablespoons fresh lime juice, 1 tablespoon extra-virgin olive oil, 1 teaspoon honey, 1 teaspoon sea salt, and 1 teaspoon freshly ground black pepper. Whisk or shake vigorously until honey is dissolved and dressing is emulsified.

Dress salad

Pour about three-quarters of the dressing over the salad and gently toss to coat—reserve the remainder to adjust seasoning after a brief rest.

Adjust seasoning and finish

Taste the salad and add more dressing if needed. Sprinkle 2 tablespoons toasted chopped pistachios and 1 teaspoon lime zest over the top. Finish with a light pinch (about 1/4 tsp) of flaky sea salt to enhance sweetness and a final crack of black pepper if desired.

Serve immediately or chill briefly. For best texture, let the dressed salad sit 5–10 minutes to allow flavors to meld, then serve chilled or at cool room temperature.
