Preparation of Salad Components

Prepare the Green Tomatoes

Slice the green tomatoes into 1/4 inch thick rounds. Season with salt and black pepper. Set aside.

Breading Station

In one bowl, place the all-purpose flour. In a second bowl, beat the eggs. In a third bowl, place the cornmeal.

Bread the Tomatoes

Dredge each tomato slice in flour, dip in beaten eggs, and finally coat in cornmeal. Ensure they are well-covered.

Fry the Tomatoes

Heat vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the breaded tomato slices in batches, frying until golden brown, about 3-4 minutes per side. Drain on paper towels.

Mix the Dressing

In a bowl, whisk together buttermilk, mayonnaise, Dijon mustard, garlic powder, salt, black pepper, and lemon juice until smooth. Adjust seasoning to taste.

Make the Crab Cakes

In a mixing bowl, gently combine lump crab meat, breadcrumbs, mayonnaise, egg, Old Bay seasoning, salt, and black pepper. Form into small patties.

Cook the Crab Cakes

In a skillet over medium heat, add a little oil. Cook crab cakes for about 3-4 minutes on each side until golden brown. Drain on paper towels.

Assemble the Salad

Assemble the Salad

On a large platter, layer mixed greens, fried green tomatoes, and pickled red onions. If using, add crab cakes on top. Drizzle with buttermilk dressing before serving.
