Preparing the Salad

Prepare the Vegetables

Wash and peel the heirloom carrots. Cut them into thin slices or julienne them to create thin strips. Dice the tomato into small chunks. Slice the radish thinly. If using canned hearts of palm, drain and rinse them, then cut them into bite-sized pieces.

Combine the Salad Ingredients

In a large mixing bowl, combine the sliced heirloom carrots, diced tomato, sliced radish, and chopped hearts of palm. Toss them gently to mix.

Incorporate the Cheese

Grate or cube the bourbon cheddar and add it to the salad mixture. Gently fold the cheese into the salad until evenly distributed.

Making the Vinaigrette

Prepare the Vinaigrette

In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, fresh herbs, salt, and black pepper until well combined. Adjust seasoning to taste.

Pour the vinaigrette over the salad and toss gently to coat all ingredients evenly with the dressing.
