Method
Dough Preparation
Combine Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, instant yeast, and salt until well combined.
Heat Milk and Water
In a small saucepan, heat the milk and water over medium heat until warm but not boiling (about 110°F or 43°C).
Combine Wet and Dry Ingredients
Pour the wet ingredients into the dry ingredients, stirring until a soft dough forms. If the dough is too sticky, you can add a little more flour.
Knead the Dough
Turn the dough out onto a floured surface and knead for about 5 minutes until smooth and elastic.
Let the Dough Rise
Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let rise in a warm place until doubled in size, about 1 to 1.5 hours.
Frying
Shape the Beignets
Once the dough has risen, punch it down and turn it out onto a floured surface. Roll out to about 1/2 inch thick and cut into squares or rectangles.
Fry the Beignets
Carefully place a few beignets into the hot oil, frying them for about 2-3 minutes on each side, or until golden brown.
Drain the Beignets
Remove the beignets from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
Serving
Dust with Powdered Sugar
While the beignets are still warm, dust generously with powdered sugar before serving.
Enjoy
Serve the beignets warm, ideally with coffee or hot chocolate.
