Brewing Kombucha
Prepare the Tea
Boil 4 cups of water and add the tea bags. Let it steep for about 15 minutes. Remove the tea bags and stir in the sugar until dissolved.
Add Starter Tea and SCOBY
Add 1 cup of starter tea to the jar and gently place the SCOBY on top of the liquid.
Ferment
Cover the jar with a breathable cloth and secure with a rubber band. Let it ferment in a warm, dark place for 7 to 14 days, tasting periodically until it reaches your desired tartness.
Flavoring and Bottling
Add Flavors
Once the kombucha is fermented, remove the SCOBY and reserve it. In the same jar, add elderflower syrup, grated ginger, and fresh mint leaves. If making the mojito version, also add chopped lemongrass and lime juice.
Chill and Serve
Once carbonated, refrigerate the kombucha. Serve chilled with a splash of sparkling water, garnished with mint leaves and lime wedges if desired.
