Prepare the Grapefruit

Cut the grapefruits in half and carefully scoop out the flesh, leaving the outer shell intact. Set aside.

Make the Pistachio Brittle

In a saucepan, combine the granulated sugar and water. Cook over medium heat, stirring occasionally until the sugar dissolves, then stop stirring. Allow the mixture to boil until it turns a golden amber color (about 8-10 minutes). Remove from heat and quickly stir in the pistachios, rosewater, and salt.

Pour the pistachio mixture onto a parchment-lined baking sheet. Spread it out into an even layer. Let it cool completely until hardened, then break it into pieces.
