Sauté the Base Ingredients

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent. Stir in the minced garlic and cook for another minute until fragrant.

Add the Vegetables

Add the diced carrots, celery, and potatoes to the pot. Stir to combine and cook for about 5-7 minutes, allowing the vegetables to soften slightly.

Incorporate the Broth

Pour in the vegetable broth and add the bay leaves. Bring the mixture to a boil, then reduce the heat to a simmer.

Add Seasonal Vegetables

Once the broth is simmering, add the diced zucchini, bell pepper, green beans, and tomatoes to the pot. Stir well to combine all the ingredients.

Season the Soup

Stir in the dried thyme, black pepper, and salt to taste. Simmer the soup for about 20-25 minutes, or until all the vegetables are tender.

Finish with Fresh Ingredients

Remove the bay leaves from the pot. Stir in the chopped fresh parsley and lemon juice just before serving.
