Preheat the Oven

Preheat your oven to 350°F (175°C).

Prepare Flax Egg

In a small bowl, mix ground flaxseed with water and let it sit for 5 minutes to thicken.

Sauté Vegetables

In a skillet, sauté chopped onion, bell pepper, and garlic over medium heat until softened, about 5-7 minutes.

Combine Ingredients

In a large bowl, combine Impossible Burger, rolled oats, sautéed vegetables, flax egg, soy sauce, ketchup, dried thyme, salt, and black pepper. Mix well until all ingredients are combined.

Shape the Loaf

Transfer the mixture into a loaf pan and shape it into a loaf.

Bake

Bake in the preheated oven for 45-50 minutes, or until the top is firm and golden.

Cool and Serve

Allow the meatloaf to cool for 10 minutes before slicing and serving.
