Chill flute

Place a Champagne flute in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail to properly chill the glass.

Build and shake

In a cocktail shaker, add 2 fl oz Bombay Sapphire gin, 0.5 fl oz freshly squeezed lemon juice, 0.5 fl oz simple syrup, and a generous handful of ice (about 1 cup). Secure the lid and shake vigorously for 10–12 seconds until the shaker is well chilled.

Strain

Remove the ice or water from the chilled flute if used. Double-strain the shaken mixture into the chilled Champagne flute to remove small ice shards or pulp.

Top with bubbles

Top the flute with about 3 fl oz chilled Champagne or dry sparkling wine. Pour gently down the side of the glass to preserve carbonation and prevent overflow.

Garnish and serve

Express a lemon twist over the drink by holding the twist with the peel facing down and giving it a quick twist to release oils, then drop it into the flute or rest it on the rim. Serve immediately.
