Combine

Measure equal parts honey and hot water (here 1/2 cup each) into a heatproof container.

Dissolve

Stir until honey is fully dissolved and the mixture is smooth. Let cool to room temperature before using. Store in the refrigerator up to 2 weeks.

Prepare glass

If you prefer the Gold Rush served over ice, fill an old-fashioned glass with fresh ice. Alternatively, you can strain into a chilled coupe without ice.

Shake

Add 2 oz bourbon, 3/4 oz fresh lemon juice, and 3/4 oz honey syrup to a cocktail shaker. Fill the shaker with ice (about 1 cup).

Vigorously shake

Shake hard for 12–18 seconds until the outside of the shaker is cold and well chilled. This both chills the cocktail and slightly dilutes it to balance the flavors.

Strain

Double-strain (using a Hawthorne and fine strainer if available) into the prepared old-fashioned glass over fresh ice, or strain into a chilled coupe if serving neat.

Garnish

Express a lemon twist over the drink to release oils, run it around the rim if desired, and drop it in (or place a lemon wheel on the rim). Serve immediately.
