Prep

Pat calamari rings dry with paper towels. Place buttermilk in a shallow bowl and toss calamari briefly to coat. Let sit 10 minutes while you prepare the dredge and oil.

Dredge

In a shallow bowl combine all-purpose flour, cornstarch, salt, black pepper, smoked paprika, and garlic powder. Shake off excess buttermilk from calamari and dredge pieces in the flour mixture, pressing to adhere and shaking off excess.

Fry

Heat vegetable oil in a deep skillet or pot to 360°F (182°C). If you don't have a thermometer, test oil by dropping a pinch of flour — it should sizzle immediately. Fry calamari in small batches for 1 to 1½ minutes until golden and crisp. Do not overcrowd the pan. Remove with a slotted spoon to a paper towel–lined tray to drain.

Finish

While still hot, sprinkle calamari with flaky sea salt and a little lemon zest. Serve immediately with lemon wedges and chosen dipping sauces.

Shrimp Skewers

Marinade

In a bowl combine olive oil, fresh lemon juice, minced garlic, red pepper flakes, salt, and black pepper. Add the shrimp and toss to coat. Marinate at room temperature for 10–15 minutes (no longer than 30 minutes to avoid toughening).

Assemble

Thread shrimp onto soaked wooden skewers, about 3–4 shrimp per skewer depending on size, leaving a little space between each for even cooking.

Cook

Heat a grill or grill pan over medium-high heat. Brush grates lightly with oil. Grill skewers 2–3 minutes per side until shrimp are opaque and just firm (internal temperature ~120–130°F). Avoid overcooking.

Finish

Remove skewers and brush with any reserved marinade or a little extra olive oil. Sprinkle chopped parsley and a pinch of lemon zest over the shrimp before serving.

Dipping Sauces

Portion garlic aioli, sweet chili sauce, and tartar sauce into small bowls for serving. Place sauces near the calamari and shrimp skewers so guests can choose. If using store-bought sauces, briefly stir to smooth before serving.

Garnish & Finish

Arrange calamari and shrimp skewers on a large platter. Sprinkle with chopped chives or parsley and the remaining lemon zest. Offer lemon wedges and additional flaky sea salt at the table.
