Turkey Meatloaf

Prepare the Meatloaf Mixture

In a large mixing bowl, combine the ground turkey, breadcrumbs, egg, chopped onion, minced garlic, Worcestershire sauce, salt, black pepper, paprika, and dried thyme. Mix until just combined.

Shape and Bake

Preheat your oven to 350°F (175°C). Shape the mixture into a loaf and place it in a greased baking dish. Bake for 45-50 minutes or until internal temperature reaches 165°F (75°C).

Prepare the Gravy

In a small saucepan, heat the olive oil over medium heat. Add the chopped dried figs and sauté for 2-3 minutes. Pour in the chicken broth and balsamic vinegar, then season with salt and black pepper.

Simmer

Bring the mixture to a boil, then reduce to a simmer. Cook for about 10 minutes, or until the figs are softened and the gravy thickens slightly. Blend if a smoother consistency is desired.

Boil the Potatoes

In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes. Drain well.

Mash and Season

In the same pot, add butter, milk, chopped chives, salt, and black pepper to the drained potatoes. Mash until smooth and creamy.
