Prepare the Kiwi Filling

In a medium mixing bowl, combine the diced kiwi, brown sugar, cornstarch, lemon juice, cinnamon, and nutmeg. Stir until the kiwi is well coated and the ingredients are evenly mixed. Set aside to let the mixture rest for about 10 minutes.

Prepare the Puff Pastry

Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the puff pastry sheets to about 1/8 inch thick. Cut each sheet into a large rectangle (approximately 10 x 12 inches).

Assembling the Wellington

Fill the Pastry

Place half of the kiwi filling in the center of one pastry rectangle, leaving a border of about 1 inch. Carefully cover with the second pastry rectangle. Press the edges together to seal and crimp with a fork.

Egg Wash

Brush the top of the pastry with the beaten egg and sprinkle a pinch of salt over it for added flavor. Make a few small slits in the top of the pastry to allow steam to escape.

Baking

Bake the Wellington

Place the assembled Wellington on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown and puffed up.

Once baked, remove the Wellington from the oven and allow it to cool for about 10 minutes before slicing. Serve warm as a delightful dessert.
