Prepare the Kiwi Filling
In a medium mixing bowl, combine the diced kiwi, brown sugar, cornstarch, lemon juice, cinnamon, and nutmeg. Stir until the kiwi is well coated and the ingredients are evenly mixed. Set aside to let the mixture rest for about 10 minutes.

Prepare the Puff Pastry
Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the puff pastry sheets to about 1/8 inch thick. Cut each sheet into a large rectangle (approximately 10 x 12 inches).
Assembling the Wellington
Fill the Pastry
Place half of the kiwi filling in the center of one pastry rectangle, leaving a border of about 1 inch. Carefully cover with the second pastry rectangle. Press the edges together to seal and crimp with a fork.
