Preparation Steps
Prepare the Noodles
Bring the water to a rolling boil in a large pot. Add the fresh ramen noodles and cook according to package instructions, usually around 3-4 minutes, until they are al dente. Drain the noodles and set aside.
Make the Broth
In a separate large pot, prepare your preferred ramen broth (tonkotsu, shoyu, or miso) by following the instructions on the broth package or recipe. Simmer until heated through and flavors meld.
Serving Kaedama
Once the broth is ready, return the cooked noodles to the pot with broth, allowing them to soak for about 1 minute. Serve the ramen in bowls and top with your choice of toppings such as sliced green onions, nori, or soft-boiled eggs.
Add Additional Noodles
If you desire a second helping of noodles (kaedama), cook additional ramen noodles in boiling water for 2-3 minutes, drain, and serve in the same broth.
