Prepare the Ingredients

Wash and chop all vegetables. Cube the tofu and set aside.

Saute Aromatics

In a large pot, heat the sesame oil over medium heat. Add minced garlic and grated ginger, sauté for about 1 minute until fragrant.

Add Vegetables

Add the sliced carrots, diced bell pepper, and chopped green onions to the pot. Sauté for 5-7 minutes until the vegetables start to soften.

Combine Broth and Soy Sauce

Pour in the vegetable broth and soy sauce. Add sugar and stir well to combine. Bring the mixture to a boil.

Add Tofu

Once boiling, gently add the cubed tofu. Reduce heat and let the mixture simmer for about 10 minutes.
