For the Filling
Cook the Meat
In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef, breaking it apart with a spatula.
Season the Mixture
Stir in the chili powder, cumin, salt, and pepper. Cook for another 2 minutes until fragrant. Remove from heat.
Mix with Cheese
Add 1 cup of shredded cheese to the meat mixture and stir until well combined.
For Assembling the Enchiladas
Preheat Oven
Preheat your oven to 350°F (175°C).
Prepare the Tortillas
In a dry skillet, heat each corn tortilla for about 30 seconds on each side until pliable.
Fill the Tortillas
Take a warmed tortilla, place about 2-3 tablespoons of the meat filling in the center, and roll it up tightly. Place seam-side down in a greased baking dish.
Add Sauce and Cheese
Once all tortillas are filled and placed in the dish, pour the enchilada sauce over the top and sprinkle the remaining cheese over the sauce.
Bake
Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and golden.
Serve
Remove from the oven, let cool for a few minutes, then top with sour cream and chopped cilantro before serving.
