In a mixing bowl, combine the shredded cooked chicken, shredded cheese, salt, and ground cumin. Mix well until all ingredients are evenly combined.

Assemble the Flautas

Take one corn tortilla and place 2-3 tablespoons of the chicken filling along one edge. Roll the tortilla tightly to encase the filling and secure with a toothpick if necessary. Repeat with the remaining tortillas and filling.

Fry the Flautas

In a large skillet, heat the vegetable oil over medium-high heat. Once the oil is hot, carefully add the rolled flautas in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy on all sides, about 3-4 minutes per side. Remove and drain on paper towels.

Prepare the Guacamole

Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl. Mash the avocado with a fork until smooth but still slightly chunky.

Mix in Ingredients

Add the lime juice, diced tomatoes, chopped cilantro, minced garlic, and salt to the mashed avocado. Stir well to combine all ingredients.

Taste and Adjust

Taste the guacamole and adjust the seasoning with more salt or lime juice if desired.
