For the Chicken Filling

Sauté the Aromatics

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until the onion becomes translucent.

Add Garlic and Spices

Add the minced garlic, cumin, paprika, salt, and black pepper to the skillet. Cook for another 1-2 minutes until fragrant.

Incorporate Chicken

Add the shredded chicken to the skillet and mix well, allowing the chicken to heat through and absorb the flavors. Remove from heat and set aside.

Mix the Cream Cheese

In a mixing bowl, combine the softened cream cheese, diced jalapeños, lime juice, garlic powder, and salt. Mix until smooth and well incorporated.

For Assembly

Fill the Tortillas

Lay out each flour tortilla and place a portion of the chicken filling in the center of each. Add a dollop of the jalapeño cream cheese mixture on top of the chicken.

Fold and Fry

Fold the sides of the tortilla over the filling, then roll it up tightly. In a large skillet, heat oil over medium-high heat. Fry each tortilla seam side down until golden and crispy, about 3-4 minutes per side.

Add Cheddar Cheese

Once crispy, remove the tortillas from the skillet and place them on a baking sheet. Sprinkle shredded cheddar cheese on top of each tortilla, then place them under a broiler for 1-2 minutes until the cheese is melted and bubbly.

Serve

Remove from the oven, let cool for a minute, then slice and serve warm with your favorite salsa or guacamole.
