Dough Preparation
Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Stir gently and let sit for about 5-10 minutes until frothy.
Combine Ingredients
In a large mixing bowl, combine flour and salt. Add the activated yeast mixture and melted butter, and mix until a dough forms.
Knead Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
Let Dough Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Forming Pretzel Bites
Preheat Oven
Preheat your oven to 450°F (232°C).
Prepare Baking Soda Bath
In a large pot, bring 10 cups of water to a boil. Add baking soda carefully.
Shape Dough
Once the dough has risen, punch it down and divide it into small pieces (about 1 inch each). Roll each piece into a ball.
Boil Pretzel Bites
In batches, boil the dough balls in the baking soda bath for about 30 seconds each. Remove with a slotted spoon and place on a baking sheet lined with parchment paper.

Bake in the preheated oven for 12-15 minutes until golden brown.
Cheese Sauce Preparation
Make Roux
Add flour to the melted butter and whisk for about 1 minute until combined and lightly golden.
Add Milk
Gradually whisk in milk until smooth. Continue to stir until the mixture thickens.
Add Cheese and Seasonings
Remove from heat and stir in shredded cheddar cheese, salt, pepper, and garlic powder until the cheese is melted and the sauce is smooth.
