Cook the Bacon

In a skillet over medium heat, cook the slices of bacon until they're crispy, about 5-7 minutes. Flip occasionally to ensure even cooking. Once done, place on a paper towel to drain excess grease.

Prepare the Avocado

Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until it reaches your desired consistency. Season with salt and pepper to taste.

Slice the Tomato

Slice the tomato into thin rounds and set aside.

Shred the Cheese

If not pre-shredded, shred the Monterey Jack cheese using a grater.

Spread the Mayonnaise

Take two slices of bread and spread 1 tablespoon of mayonnaise on one side of each slice.

Layer the Ingredients

On one slice of bread (mayonnaise side up), layer the cooked bacon, mashed avocado, shredded Monterey Jack cheese, lettuce, and tomato slices.

Top and Grill

Place the other slice of bread on top, mayonnaise side down. Heat a grill or skillet over medium heat and grill the sandwich for about 3-4 minutes on each side, or until the bread is golden and the cheese has melted.

Serve

Remove the sandwich from the heat, cut in half if desired, and serve immediately.
