Start by washing the tomatoes thoroughly under cold water. Pat them dry with a paper towel. Cut the tomatoes in half horizontally.

Seasoning

Sprinkle cracked black pepper over the cut surfaces of the tomatoes evenly. If you prefer, you can also add salt to taste.

Cook the Bacon

Preheat your Blackstone griddle over medium heat. Place the bacon slices on the griddle and cook for about 5-7 minutes on each side or until crispy and golden brown. Remove the bacon and let it drain on paper towels.

Griddle the Tomatoes

In the same spot on the griddle where you cooked the bacon, add a tablespoon of olive oil. Place the seasoned tomato halves cut side down on the griddle. Cook for about 3-4 minutes until they are charred and heated through.

Final Assembly

Once the tomatoes are cooked, remove them from the griddle. Serve the crispy bacon alongside the griddled tomatoes for a delicious breakfast or snack.
