In a skillet over medium heat, add the chorizo and cook for about 5-7 minutes, breaking it apart with a wooden spoon until browned and fully cooked.

While the chorizo is cooking, chop the roasted red peppers and red onion. Set them aside.

Once the chorizo is cooked, add the chopped roasted red peppers and red onion to the skillet. Stir and cook for an additional 3-4 minutes until the vegetables are slightly softened.

Sprinkle the cheddar cheese over the chorizo and vegetable mixture. Cover the skillet and let it cook for 2-3 minutes, until the cheese is melted.
