Caramelize the Onions

Slice the medium onion thinly. In a skillet, melt 2 tablespoons of butter over medium heat. Add the sliced onion and sauté, stirring occasionally, until the onions are soft and golden brown, about 15-20 minutes. Set aside.

Make the 1000 Island Dressing

In a small bowl, combine 1 tablespoon of mayonnaise, 1 tablespoon of ketchup, and 1 tablespoon of sweet pickle relish. Mix well and set aside.

Prepare the Beef Patty

In a bowl, combine 1 pound of ground beef, 1 teaspoon of salt, and 0.5 teaspoon of black pepper. Form the mixture into one large patty or two smaller patties, depending on your preference.

Cooking

Cook the Beef Patty

In the same skillet used for the onions, increase the heat to medium-high. Cook the beef patty for about 4-5 minutes on each side, or until it reaches your desired level of doneness. During the last minute of cooking, place 2 slices of Swiss cheese on top of the patty to melt.

Assemble the Patty Melt

On two slices of rye bread, spread a generous amount of the 1000 Island dressing. Place the cooked beef patty with melted Swiss cheese on top, followed by a portion of the caramelized onions. Top with the remaining slices of rye bread.

Grill the Patty Melt

Wipe the skillet clean and return it to medium heat. Add a little butter to the skillet. Place the assembled patty melts in the skillet and grill for about 3-4 minutes per side, or until the bread is golden brown and crispy.

Serve

Remove the patty melts from the skillet, slice in half if desired, and serve hot with additional 1000 Island dressing on the side.
