Prepare the Whole Grain Mustard Aioli

Make the Aioli

In a small bowl, combine mayonnaise, whole grain mustard, minced garlic, lemon juice, salt, and black pepper. Mix until smooth and well combined. Set aside.

Assemble the Sandwich

Layer the Ingredients

On one slice of sourdough bread, spread a generous layer of the whole grain mustard aioli. Layer with braised pork, sliced ham, Swiss cheese, and pickles. Top with another slice of sourdough bread.

Grill the Sandwich

Butter the Bread

Spread butter on the outer sides of both slices of the sandwich.

Heat the Pan

Preheat a skillet or griddle over medium heat.

Cook the Sandwich

Place the sandwich in the preheated skillet. Cook for about 3-4 minutes on one side, or until golden brown. Carefully flip and cook the other side for another 3-4 minutes, or until the cheese is melted and the bread is nicely browned.

Serve

Slice and Serve

Once the sandwich is grilled to perfection, remove it from the skillet. Let it rest for a minute, then slice it in half and serve with extra pickles on the side.
